Sweet Cinnamon Pie


Custard pie was something we constantly had during the holiday season. I was raised eating many, many (probably way too many) pieces of egg custard pie. It created using eggs, evaporated milk, sugar, and at times a small calamansi juice/zest to brighten up it. To make this pie satisfied for conventional Thanksgiving flavors, I swapped for evaporated milk in cinnamon for buttermilk and calamansi. The resulting cinnamon buttermilk pie is magic.


3 large eggs

1 large yolk

1 cup light brown sugar, packed

1 cup buttermilk

1/2 cup unsalted butter, melted and cooled

2 Tbsp all-purpose flour

1 tsp pure vanilla extract

2 tsp ground cinnamon

Pie Dough

1 cup + 2 Tbsp all-purpose flour

1/2 tsp fine sea salt

2 Tbsp granulated sugar

8 Tbsp unsalted butter, cut into small cubes, chilled

2-3 Tbsp water, ice cold

1 large yolk
